Mellow Habanero is a Japanese craft hot sauce maker that produces unique and high quality hot sauces, focusing on habaneros grown without pesticides or chemical fertilizers. Taku Kondo, aka Habanero Man, first encountered the habanero in 2002 and was fascinated by its color, shape, perfume-like aroma, fruity taste, and intense spiciness that came afterwards, and began growing it. In 2005, he started making hot sauce for himself and his friends using the habaneros he had grown. Mellow Habanero was born at this time. In 2017, he introduced "Hop in Heaven," a sauce made with habaneros, hops, and sansho, which went on to win the U.S. World Hot Sauce Award that same year.
